Ok guys I've used pops brine to turn a Boston butt into a ham worked perfectly fabulous ham in fact. Well I tried again same weight butt same amount of cure salt sugar etc day 13 of cure. Brine turned ugly got a bit smelly not sure what happened any ideas. Stayed sumerged in a sealed...
Were in south louisana it's about 75 degrees today it's been cooking for bout 4 hours at 265 or so looking good so far. Don't tell my wife I highjacked here thread:)
