    There really isn't much to it. When I had mine, I removed the chip tray and opened up the vent. I stopped using it because the chimney would build up with creosote and the chips would stick. I bought the amazen pellet tray and that seems to work much better.

    Masterbuilt smokers are designed to be used with chips. I use the amazen tray in mine and it works great with pellets. Hickory can get strong sometimes too.

    I've found using apple cider vinegar in the water pan with the vent 1/2 way open works great. Trim the hard fat, but leave enough of a fat cap that it doesn't dry out.
