Ok, curious about everyone else's opinion.
When making Pepper Stix, or Snack Stix, do you finish your Stix to temp in the smoker? Or do you finish to temp in hot water bath?
I have done both, and like the finished product both ways, but am curious what everyone else likes...
Well, we got the job done in 4 days.
100 # German sausage
100# beef stick
100# jalapeno cheddar beef stick
60# old fashion Frank's/ hot dog
100# pepper jack salami
50# cheddar salami
75# brats
45# fresh breakfast sausage
And 50# of elk burger
We r doing this run in Gramps's slaughter house at the ranch. Huge walk in locker cooler and an awesome old Hobart grinder that eats meat like a wood chipper!
We will be smoking tomorrow, so u could leave with the ribs today...

We had 3 or 4 guys there today working. Shucks, we just laugh and joke all day, and cut up meat. We cut up about 700 pounds of meat today. Start grinding and mixing and stuffing in the morning.
But if ya wanna bring some of them ribs by about noon tomorrow....
Just smoked a 25 pound batch of LJ and thought I would share. This is only my second run of landjaeger.
Used a 75/25 beef top round/pork butt blend. LJ seasoning from Mitchlich. And 27/29mm hog casings. First test I used 22mm sheep casings and they were pretty small.
Cut up, ground meat thru 1/8...
How do I do that? I don't see an option for that on phone. This guy is just a retired dirty shirt lineman, if it doesn't run on 2 stroke or diesel, it confuses me.
Hey Gary. Thanx for the welcome. It's a balmy 9 degrees here this morning. Glad I am smoking inside under the new exhaust hood! Got 25 pounds of landyaeger going this morning.
I have tried a couple times to upload pics direct from my Android phone, and get the same results. Says Uploaded image is too big. Any help would be appreciated, Thanx!

On our Polish/kielbasa, I start the stuff with about 2 inches of empty casing, stuff 18inches, and add another 2 inches of empty casing. Then tie a square knot in the casing ends, pull it good n tight, and make sure no slip. The next day I hang the knots over over the dowels and smoke away.
