    Vinegar anyone?

I gave the vinegar jars their second feeding this afternoon. 2 1/2 cups each of fresh wine. One more feeding in about 5-6 days and then the 3 month wait. Should be interesting and it's already smelling great - if you like that kind of stuff!!

    Sawdust from Todd Johnson

Just an observation, but, if using alcohol you might stop buy the local hardware store and get denatured alcohol (paint thinner). It has less water and burns a whole lot better than isopropol/rubbing alcohol. Still burns white/blue so be careful. I used to use homemade backpacker stoves with...

    Vinegar anyone?

I just fed the two vinegar jars last night - first feeding. I do have "mother" developing on the top. 2 1/2 cups of wine each. I'll do this again, twice more, at about 1 week intervals. The vinegar should be getting ready about March. I am doing this very low tech. I'm using pickle jars with...

Using your coffee grinder for a spice grinder

I just read somewhere (maybe Cooks Illustrated) that a tablespoon or so of raw rice can be powdered in the grinder to clean it. This is good if you use for coffee, too, as it will absorb the oil from the coffee beans, too. I'm getting a second grinder soon since I'm back to grinding coffee more...

Cold Smoke Generator Build... Will This Work?

This is just an observation from an old fart: We (and I'm among the worst) tend to over-think and over-engineer everything we  built. I remember my uncle's smoke house in GA - it was a dirt floored shed with cracks in the siding, a sloped rood with eve vents/screens, no chimney, no stove or...

    Vinegar anyone?

Balsamic is aged for 12 years or so! I'm thinking of a couple of months and maybe reducing some. Reducing helps the sweetness.

    Vinegar anyone?

Dave,  Vinegar does indeed have subtleties we barbarians rarely address. Good vinegar is like a wine - duh, the good stuff starts as wine!! I'm just starting on my vinegar journey and San Sebastian Vintners Red is going to be my next project. A regional muscadine varietal!! I am so looking...

    Vinegar anyone?

I'm not sure where to place this, here goes in General Discussion!! My latest project is vinegar. I got some "mother" for red and white vinegar (they have cider "mother" too) from http://www.beer-winemaking.com/  but other places have "mother". I love good vinegar and got to thinking about...

Deep fried Turkey for wife's office party

I ran out of time for sliced pics. Had to head to work (work is definitely a 4-letter word!). I bone it out and "steak" cut the white meat.

Deep fried Turkey for wife's office party

Thanks, I cook for these support functions all year long. We roasted a 20# last night and it'll be going to the party, too. I did semi-grilled wings (about 30#) a few months ago for a function at the Hospice office. It's fun cooking for those folks.

Deep fried Turkey for wife's office party

Here's a 10# turkey being fried up. Used commercial cajun butter injection last night and creole seasoning under the skin, on the skin, and in the cavity. I'm using canola oil since I'm too cheap to by peanut oil!! Prepped and on the stand Ready for a dip in the "pool". Gently into the...

No PICS: Andouille stuffed ABT's with Shrimp Boil on Saturday

No pics. Did a few jalapeno ABTs with cream cheese/cheddar seasoned with cajun spice and a nice slice of andouille. Bacon wrapped, of course, and cooked in the MES40 with Jack Daniel's pellets. Also did some sweet peppers stuffed the same. The shrimp boil went well with 5# of shrimp along with...

OK...I'm Confused by the MES 40!...Chef JimmyJ

Mine stays on the lanai (under the roof) next to the pool. I haven't had it all that long but no issues at all with durability, so far!! This thread reminded me to get the ABT stuff for tomorrow!! Shrimp boil for friends and ABTs for appetizers! I'll be using andouille made a couple of months...

Pops, I don't know you personally and haven't been around here long enough to "know" you very well as a forum entity, however I am real active on other forums where the relationships, such as you have here, become very real and personal.  Also, I'm a Hospice software analyst and husband of a...

    IRS EMAIL SCAM WARNING!!!

There's a similar on-going scam with an email from a financial "clearing house". I forget the name right now but my wife got one the other day. It'll reference a rejected check with account number such-and-such, blah, blah, etc. Don't open the link, don't respond to the email. Snopes had an...
