Is it possible to smoke succesfully when it is 20 outside? I am currently trying to smoke a 2.5 pound prok shoulder. Its been on at 225 for 4.5 hours now and is only at 145 degrees. This is my second attempt at this and it seems at this rate it could take 8-9 hours for a 2.5 pound...
One thing to note. I am having trouble keeping it at 225. Its about 15-20 degrees where I live and I have to have it almost all the way down to stay around 225. Then the burner seems to have a mind of its own that low.
Do the needle valves help keep a consistend flame. I have a proplem with my 36" vertical. In order to keep it near 225 it has to be turned almost all the way down. Then, the flame is easily blown by wind and seams to get stuck on low after a while. I have to crank it back up and then down...
Careful with the silicone. The MDS sheets for those products state that when heated to 300 they give of formaldehyde fumes.
Cant imagine that is good for food???

Do you guys use water in your water pan or not? I read somewhere that buring propane creates moisture already.
How would using it or not using it affect your results?
They sold me a back ordered Perfect Flame 36" for that was on sale for $89 (i think it was only 89 because it was a floor model or clearance). They replaced the Perfect Flame model with the Master Forge so they gave me that instead.
I was thinking of that as well. I would have to make additional mods and create a place for the pan to rest over the flame. If I set it on the bottom it will smother the flame and If i put it on top of a grate it will be too far above the flame.
