Actually I found your iron and box thread right after I posted, TJ. I found a very deep alum stock pot with about 4 stackable steaming trays at the bazaar today too. Should work great for small batches of ribs, brisket, etc.
Well, I realized that the cardboard box idea just might be my best bet.
