Not too bad of prices on their other spices....and I noticed they had greater variety of "sizes" available to purchase...in case you only want a small amount to try something out...
Assuming your wife knows the basics of canning......
Our group of deer hunters cans about 50 qts. each year with a very simple recipe.
Pack the jars to 1" from the top with cubed venison. (we use trimmings from other cuts and front leg/shoulder meat mostly)

The Weber chimneys definitely are a nice piece of equipment...as ALX said...keep it dry and it will last.
Only thing that makes them better is getting them on an "end of season" clearance for $11.....

Welcome to the site, Outlaw! Great to see another Iowa boy joining the ranks of smokers. I'm originally from the Tama/Toledo area...now residing in Osage. Whereabouts in central Iowa are you from? Plenty of folks on here anywhere from South central to North central parts of the state...
Really? I prefer it the other way around....slice the brisket, and pull the chuck. Then again, I haven't tried to slice a chuck...so, I can't really comment on how that turns out...
I think the best way to find out is to load up the smoker and try them all side-by-side.....

Just my two cents worth....but, if you have plenty of seasoned oak, also....use some of that along with the maple.....it'll burn longer, and oak adds some nice flavor depth to a lighter wood like maple.

If you're having trouble finding good lump in the PNW....try using standard briquettes....or, the Kingsford competition briquettes burn nearly as hot as lump, and are more readily available....i.e....Walmart.
Royal Oak charcoal briqs work well, too...if you can find the R.O. lump in your area...
