    Spring is finally here, time to smoke cheese. Sharp Cheddar, Mont. Jack and Pepper Jack.   Friends have been waiting all winter. Using cherry and cold smoking. Vacuum pack and let go for 2 weeks, that's the hardest part.

    Picked up a used Hobart Mixer from a friend. No bowl or attachments, but was able to pick them up from a supply store.  Now I had to try it out. Summer Sausage!   20lbs. at one time, Sweet
