    Covered in worcestershire, then SPOG, overnight in the fridge, then on the UDS at 11am today at 220°, smoke for 2 hours, then foil wrap for last hour, rest for 2 hours in cooler wrapped in a towel, then slice'n'eat! Ill post pics when I wrap it up! Also going to put a brine free whole chicken...

    I didnt get any pictures after the smoke, i was called out for work for two hours, but this is all the meat cubed, spices and beer added, and all of it into the crockpot. A 12 hour simmer, and it will be time to eat! BTW, 1/3 beer down before i was called out. Not the number i was thinking...

    Yeah, ambient temp right now is in the nineties for us, bit too warm. And thanks guys for the great compliments. The lamb was excellent. Now on to ribs!

    I have a little chief too, my first smoker, and I thought that thing was awesome. But I love my UDS, one of the best things I have ever built. I have plans for modifications too, even a way to cold smoke in 90° heat...

    4 hours at 225, with an IT of 141, off the the grill for a reverse sear! All wrapped up, dinner in 2 hours!
