Yea everything was set right. It was user error (i think) haven't smoked since the post but i think in the directions it said something about pressing a set of buttons to activate the alarm. I just set then and didn't "activate" it. Next time i smoke I will shoot an update here. Thanks
I got my 733 a few weeks ago and love it! Little cumbersome to use but once you get the manual next to you it is easy. So I used it for the first "real" bbq yesterday. After bout an hour smoking I look down at it & it says 250 degrees but my alarms were set to 215-235... What gives? No sounds...
I suppose I could see where you are coming from. I don't think though he is saying you can't cold smoke, but merely saying if you are going to cold smoke MEATS make sure you know what the hell you are doing haha and because of the risks he isn't going to give tips. Which from a liability...

I know kamado fans are really loyal & I can't argue with you since I never used one, but i had to sell the MES in order to go the Weber route. See my Chief Financial Officer says I have too many hobbies between wine making, distilling, fishing, photography, etc... It can get kind of expensive...
