    Masterbuilt XL Propane - Mailbox Mod - Heavy QView - Need Some Help!

    I just have the vents in the top back that came with the smoker. I haven't tried to mod a chimney for it. I might need to try that.

    Never did find a solution to this problem. I still have to crack the door open when the burner is lit. Hopefully someone will chime in here & let us know how to fix this problem. Phil

    Is there a standard type of salt used for sausage making?

    We use sea salt. It seems to work fine. At least everyone who eats our sausage seems to like it.

    Polish Sausage or your other favorite recipes

    I can attest to the above recipe. I grew up in and around New Braunfels Texas. So I grew up eating good German & Polish sausage. I have since moved to Deep South Texas. You cannot get good sausage down here. I have made several batches of pork sausage with this recipe & it has the same taste...

    Hog Casing Ends

    We always use Butchers Twine to tie our ends. Then once we smoke our sausage we cut off the ends before we wrap & freeze.

    Need advice on picking out the right grinder

    I have the #8 LEM grinder and have ground hundreds of pounds of meat. It is a good grinder. It pushes meat thru faster than I can load it. For the price it is worth it.
