Masterbuilt's Electric Smokehouse "MES", is considered by many on this electric forum as the best bang for your buck, best overall design, best overall feature set, of any electric smoker is the same price range. The 40" is the choice for about 70% on this forum, and if the 40 stretches the...
I have used chunks of various sized many times. Initially I used 1x1 or 1x2 inch, and more recently have used about 1.5x3 inch. To put chunks in I remove the feeding tube and use tongs in insert a chunk, smaller chunks I put two of the larger one of. I am careful so that I can re-insert the...
It is hard for me to know what to recommend for a 1200 watt MES, also my MES doesn't have a window. However you say you don't need a water pan because electric smokers regulate heat well. Unfortunately if you read through this forum for a year, you will read about the struggles of various...
The opposite end "not shown" in the photo, does NOT have a large slot, it has two round holes about 1" in diameter. The cover is made from one of those store bought disposable alum pans, the pan was cut in half then one half put over the other half to get the right size, edges folded over to...
Chef Jimmy gave you excellent answers. I just want to touch on one thing. First I do not have a MES 30 mine is an older MES 40 which only has 800 watt element, which happens to be the same as the current MES 30. Ok the one thing is use of the water pan. I have been using the AMNS and now the...
I have a lot of problems with the info in this post. First the dude says he's smoked things on a Brinkmann they come out awesome, yet we have lots of people on this forum who have upgraded from their inexpensive Brinkmanns because things DO NOT come out awesome, unless they spend a lot of time...
CONGRATS on your NEW MES, Making it Easy to Smoke Q!
I post the tips below for newbies, it attempts to answer some of the common questions that are asked, hopefully it helps.
MES New Owner Tips:
Collected from input of many MES owners, some may seem a bit dated due to new MES with higher watt...
Thanks Buck Futta for sharing your MES / Masterbuilt experience with us. It's nice to read something positive when a part breaks rather than a lot of whining.
July 4th is coming up, and since I have owned a MES 40 for past 6 years, I am the designated cook/pitmaster, for our 4th family get together. I always do BB ribs, both wet & dry, sometimes will do some spares st louis trimmed, and usually chicken thighs and some breasts. Usually we have 30-50...
How long did you expect? Figure approx. 90 minutes per pound at around 225º for pork shoulder, thus about 15 hours. Time does vary though due to differences in smokers and every pork butt is slightly different in how it receives the heat.
800 watts is more than enough BTUs / wattage to properly smoke and cook in that smoker. I have an older MES 40 with 800w element and it does just fine. I am guessing that the Master Forge is double walled with insulation sandwiched in between. If so 800w will generate way more BTUs than...
This advice is a little late sorry...
The controller you can help dry out by placing it under a warm light and a small fan to circulate air, even covering with a large cardboard box, getting the temp up to around 90º, and leave it for a few hours so that heat gets deep inside. At that temp...
BUY IT!
My MES 40 is 6 yr old, I got it from Sam's club, it was $270 plus shipping. Your getting a newer never used smoker, ask if full warranty is part of the deal, if it is a Sam's deal, ask to buy 2 year extended warranty for $30 or $15 for one year.
Try using less wood. Smoke is seasoning, you don't need a lot in an electric smoker to season your food. Also there is a proper amount of wood based on the fixed size hole of your exhaust that will achieve proper combustion and give you clean TBS, just experiment until you find that amount. ...
Forums are great, lots of helpful people to answer questions, however it is hard to know a good answer if you don't bother to read some of the posts in the forum. If you go back 2 or 3 pages of post, you will notice recommendations for the AWNPS multiple time, you would have then easily figured...
