If you do get some smoke spilling out when opening the hatch, you do have a couple of options.
1. add an inline (low cfm) fan in you exhaust, that you could turn on manually before opening the hatch.
2. add an overheat bath type fan in that soffit above the MES, and turn it on when you open...
You need high temp wires, 14 gauge or 12 gauge. Hopefully you latest wires from the appliance store will work.
Here is a link to just one of the several threads on rewiring, hope it helps.
NETBBQ congrats on your new MES,
below are some new MES owner tips, they are based on comments from MES owners here at SMF covering 6+ years.
CONGRATS on your NEW MES, Making it Easy to Smoke Q!
I post the tips below for newbies, it attempts to answer some of the common questions that are...
cstallings, why are you posting this same topic twice in two days? You got a lot of replies and several solid suggestions.
Whoever is the moderator of the Electric forum should merge this thread with his first thread.
Further in the previous thread, I posted a simple test that can establish...
animal, to the best of my knowledge there has been NO SMF member review of the Masterbuilt cold smoking kit (MCSK). That kit came out about July and there hasn't been anything written about the Masterbuilt cold smoke kit from any other source that I have found.
So to be fair, while the above...
The right side wall gets very hot, so does right side back wall at least half way up, in. my 800 watt mes40. The newer mes30 is 800w with smaller cabinet than a 40 will also be hot if not hotter. Use a clip or potato to place the Mav probe near the mes temp sensor. Write down temps for both...
This is an excellent TIP! I too do the same, however I add one more thing, when Todd first described the AWNS with a red hot cherry, that image is exactly what the AWNPS has to be when you insert the AWNPS lit into the MES. To achieve this, after lighting with a torch, I let it burn flame for...
Atio, I have had the same problem but it was with the AMNS not the AMNPS, and it was using sawdust, the main cause was overloading and the design of the AMNS where the channel separators allow too much heat to penetrate the adjacent channel, so I used alum foil over the channel separators to...
cstallings, the lower priced MES30 works GREAT! Since you have the Mav 732 there is no reason to pay for cheaper version (included in the more expensive MES) that might not even work properly. Save the money and buy more meat or BBQ tools, there is nothing to be gained with the window, except...
NetBBQ, don't feel alone, I know in the 6+ years I've owned my MES40, I have done the same thing at least twice. Now I try to add about 1- 2 hours extra just in case, depends on what I'm smoking. For Pork Butt I figure 90 min per pound + the added 2 hours, but as mentioned above I have had long...
Congrats MitchK on your NEW MES40! Welcome to the MES owner's club here at SMF.
Here is a thread from another new MES40 owner that might be helpful.

You can't go wrong with the AMNPS, I have it and use it, however Like the owner in the first thread(I...
The masterbuilt MES (Masterbuilt Electric Smokehouse "digital") 30 vs the masterbuilt analog smoker, can both smoke meat. With the addition of a Maverick 732 dual probe, and AMNPS smoke accessory both can do a better jop making the chores easier for the pit boss. However is a digital...
scdigger, if you really have a need for a smoker that is portable to take to another location, or you lack storage space, then maybe this might be ok. However I would save the money and just buy an MES. Most of us hate doing extra things before we get started or after we are finished with a...
I didn't take offense, I was being emphatic that the MES is capable of producing ribs with the texture, the flavor, and the degree of doneness, that would please any rib lover. Just remember that great cooking isn't generally the result of the cook ware, its usually the result of a great cook...
Honestly this is getting a bit anal (see note below), you can use as much sanitary techniques as you personally see fit, there has been many discussions regarding how tos on cooking safety. Yet I didn't see any health inspectors shutting down BBQ cookers at the Reno National Rib cookoff, where...
My ribs are NOT, I repeat NOT "fall off the bone", using my MES 40 to cook them, they have chew and require a gentle tug to pull away from bone . It is all about knowing when to switch to the next stage of either the 321 or 221 rule of thumb cooking method. 321 or 221 is a rule of thumb for...
You have 3 choices:
1. get more BTU of heat inside your smoking chamber for quicker recovery. You can do this by adding an auxiliary heating element, for faster recovery. It would be a 2 stage setup, only coming on when inside temp drops 15 or 20 deg below set point.
2. setup your smoker in...
