    Is Meat safe to eat?

    IMHO 1-3 hours your safe provided whatever your smoking is cooked through.  Once had a turkey not cooked through in oven sat there for about 4-6 hours, put in fridge and again sat out, found not so nice looking green spot where bacteria was happily reproducing.

    How about some pics?  Say 3 different smokes of ribs and 3 different smokes of pork butt to see if the results are consistent.  Many of us over the years have tried various briquettes in different sizes, makes, quantities, procedures, and the results are mixed and never consistent.

    MES owners have been using the tile deflector for years.  Personally I never liked the idea of using tile, it is heavy, the MES is light gauge stainless, when heated it expands, thus wear on screws and holes holding the smoke tray assembly.  Instead I use a light weight aluminum cookie sheet...

    Consider getting Sam's 2 yr extended warranty, $30 at least that was the price a couple of years ago.

    Sam's also sells an inexpensive extended warranty 1 yr $15 and 2 yr $30.  That was the price the last time I checked, might have changed.

    Just remove the rack.  Or just spray with Pam and its easy to clean afterwards. If using one rack, I like to use the one 2nd from top.  In my older MES its is closest to temp sensor.  New models the sensor is a different location.
