    I am thinking he gave you exactly what you paid for. You will know for sure the first time you use it on some poultry. We use wild cherry up here a lot. The palatability of wild fruit has nothing to do with the quality of smoke its properly cured wood produces.

    https://www.metalsdepot.com/ Not a cheap source, but they deliver to your door. I occasionally use them when time is critical and I need small quantities of specialty metals. At the end of the day, it will probably be cheaper to buy a new smoker and scrap the old one.

    Please give us a little information about how you manage the combustion air at the firebox. Are you running with the door open or using the inlet vents?

    120 Gallon smoker build

    Alternatively, you could simply cut the 120gal tank down sizing it to the firebox. Would be a whole lot faster and cheaper than building a new firebox. Use it to learn, if at some point you find the downsized smoker isn’t big enough, you can always start a larger build from scratch.

    Spend some time looking on Craig’s list in the farm and garden section. It may take a few weeks, but there is a pretty good chance some affordable used tanks will turn up. Unless you already have fabrication/welding skills, 16ga is pretty hard to learn on.

    Only measurable difference I have found between cured red and white is that red seems to catch and burn a little faster than white.

    Simple answer? NO!! What you are proposing is trying to use your smoker as a kiln. Granted, the wood would eventually dry out, but not “ in a few hours” or before burning a lot more wood than you actually trying to dry. Cooking green sap will most likely produce some rich creosote flavors...

    A lesson from the school of hard knocks....cleaning ashes during a cook can result in a bad case of “ash seasoning” on anything in the firebox. Having inlets positioned above the grate greatly helps keep clean combustion air flowing when ash starts to bridge on the fire grate .
