Got all the steel cut and prepped for installation of the racks. Wow my pile of steel is about gone. :)

Water is a great heat regulator. Meaning an open pot of water on the stove will never get above 212 degrees until all the water is gone.
Sounds like you want to create something similar?
That too is a good idea. One can place a pan on top of the c channel closer to the opening. Filling with bottle water, beer, Apple juice etc.

OMG you trimmed fat because your doctor said so? Just kidding, it must have been super thick, I never trim, but might grill it a bit.
Try a couple rosemary leaves, not much as its super strong. It grows like a bush in my front yard, I will toss some fresh cuttings in the fire near the end...
Dave do those rules apply to a gravity feed system? With the fire box full of say charcoal, the idea is to control the rate of burn by limiting air. Or are you referring to the hole size from the fire box to the cook chamber
The fire box has sealed door panels. This forces the fire/heat out into the cook chamber.
As for size of fire box, really depends on how long between refills you want to go.
You can control the burn rate with a bbq guru.
The cook chamber must be insulated to help in keeping everything...
I'm copying your grate layout. The whole build is close to the one I'm building. Maybe after this build , make a mini model for those times you don't need to cook for an army
Day 9-10-11
Sunday had to get more sanding disc and cutoff wheels for the grinder. Monday picked up another 10' of 2x2
Got the rest of the frame peices installed around fire box.
Then the frustration begins. Cutting 45 degrees to box in the door frame. These go on the frame for the doors...

Once I use it I can see if the c channel needs some adjustments. I could extend the sides down right at the fire box. The idea is that plate you see on the bottom should direct the heat sideways
Day 8
Not sure where the day went, but I did work on it all day. Got the bottom sheet metal installed along with the feet and casters.
I finished up the fire box, which took a lot of time to get just right. Can't see it in the pic but I cut the C channel down the middle and installed...
