I programmed the MES to 215. When it reached 215 and shutoff, the Maverick was 248. That is a 33 degree difference between the smoker and the Maverick.
After shutoff, the temperature continued to rise to 249( an additional 34 degrees), the Maverick 286. That is a 37 degree difference.

So I did a little experiment. I set the smoker to 250 and set the probe on the second shelf.
2:21pm -smoker 77 degree, Maverick 91
2:24 - smoker 91, Maverick 113
2:29 - smoker 166, Maverick 207
2:36 smoker 253, Maverick 289

Curious as to how you route the wire for your meat probe on a Masterbuilt 30. Do you route it down through the top vent? Or do run it out the door? Wouldn't running it out the door break the seal?

I just received my very first smoker, Masterbuilt 30 inch electric model. I was curious about the top vent. It seems like it does not close completely. It looks like a tab prevents it from closing all the way. Is this normal and will this cause any quality problems? Hope to get it...
Hello, I am Tracy and I live in Iowa. Just got my very first smoker today, a Masterbuilt 30 inch electric. Will be doing the initial seasoning this weekend and will do a inaugural smoke with a 10 lb turkey.
