I've been all over the place on how I want to build mine. I can get an SS commercial refrigerator cheap, but it's huge! I'm now thinking cement board, lined with stainless inside, and finished in that thin stone veneer on the outside. It'll be heavy as heck, but I'll weld up an angle iron base...

Probably about 50 lbs of Vension snack sticks in 19mm collagen casings. I need to get my smoker built first, though. I should be picking up a stainless commercial refrigerator later this week or early next week. It'll take me a couple of weeks to get that ready to go, I think.
I use this snack stick seasoning, at about a rate of 80% Venison, 20% Pork and it turns out great. I add their encapsulated citric acid as well. It tastes great!

I found my new (to me) sausage stuffer on Craigslist for a mere $60.00. It's a Chop-Rite (formerly Enterprise) #35 8 qt. stuffer, in very good condition. No cracks or repairs needed, just a good refurb and seasoning.
I'll give it a cast iron electrolysis clean up, repaint the non-food surfaces...

In the past, I know the Cajun Injector smokers were built by Masterbuilt. While browsing the web and eBay, I came upon a 5 rack digital smoker by Cajun Injector. It sure looks a lot like an "updated' Masterbuilt. Could this be the new updated Masterbuilt but re-badged for Cajun Injector...

Edit: New is pricey, but if I could find one on eBay that is close enough to pick up, it might work. They look well built, insulated, and should seal tight as they are designed for fire protection for paint...
