    That's really cool. *Update on the KCBS judge class "next week". The class is actually tomorrow, March 1st. I was off by a whole week, LOL.

    Is anyone here a KCBS judge? KCBS is offering a class next weekend near me. I would like to enter a few close by competitions in a year or so and think this would be great experience moving in that direction.

    Getting ready for warmer days. Took delivery of a face cord each of cherry and hickory. We needed firewood so they served a dual purpose. This should be enough cooking wood and firewood for the next year.

    I kept my brisket, that was finished today, in the cooler for 4.5 hours from pulling off the smoker to slicing. It was very moist and tender.     Over four hours in the cooler and it was piping hot. This was a winner!! Damn!!! Sliced with the wife's homemade Mac and Cheese.
