I diffnitaly think cheese should rest before sealing but I think I need a second fridge in the basement. When I rested the cheese unsealed in the main fridge, it over powered the everything in there. As for the length of smoke, trial and error is what I'll need but nothing will go to waste.

I did two ways last week. My first batch rested on wire rack uncovered in the fridge over night, ~6 hours. The second batch I vac sealed right away. Both batches had no moisture on them though. I was able to keeps temps down between 54 - 64.
I didn't read all the cheese posts though. Since then...
That sounds good. Make that Buddig corned beef dip but use pulled pork. I've never done it but it's making my mouth water thinking about it.
I found this recipe on the Internet.
3 (8 oz.) cream cheese
1 bunch green onions
2 pkg. buddig corned beef (*Use equal amounts of pulled pork instead)...

I pulled the cheese just after 5 hours in the smoke. I let them rest uncovered in the fridge until this morning, around 6 hours. I then vacuumed sealed them. I'll smoke the Gouda tonight. I think I'm only going to smoke for 3 hours with the Gouda. The A-Maze-N smoker worked easily in the kettle...
I put the A-Maze-N pellet smoker under the charcoal tray then put the Smokenator in place. I layered foil on the open part of the charcoal tray then I put a tray of ice on top of the foil. This is usually how I use the Smokenator with hot smokes, minus the A-Maze-N. I'm using apple pellets and...
Good choice with the Weber 22.5". Some differences between the Orginal Kettle (it used to be called Silver) and the Original Premium Kettle(it used to be called Gold) is the charcoal grate in the silver is concave and the gold is flat. It's harder to hold the charcoal to one side on the silver...
All you guys were right. I thought Weber wouldn't come through but they did. My lid was bent and two of the three leg welds were cracked off. I called Monday and a new lid and bowl arrived today. I have to reuse all the other parts but they weren't damaged. Wow, what customer service.
