I have been away too long :( but i'm back.
I have got some nice Tuna loins to smoke on my offset smoker this weekend. I would like to smoke them without brine.
Any good ideas?

Ye, I got it to stay at about 240F for 90mins, then added my hot sauce and cook for 30mins more at about 255F. :yahoo:
In total I used 2 cherry wood and 1 apple.
