Smoking for Two - How do you handle small batches?

As most of the others have said, a vacuum sealer is the way to go  Just load up the smoker and seal what you don't eat.  It's great to get some ribs or whatever out of the freezer, pop them into a pot of boiling water, turn to low, come back in 15 minutes and plate.  Easy peasie.  But once you...

    Toolbox smoker mod

Thanks guys. It took way longer to complete than it should have because that's what happens when you get old, with me at least. RedOctobyr, I bought that kitchen vent when I knew I was going to have a garage but before it was even started. I wanted to smoke salmon out of the elements during...

    Toolbox smoker mod

Due to a recent MES 30 purchase I now have 2 electric smokers but only one kitchen vent in the garage so what to do? Wanting everything on wheels I made a new smoker cart for the Bradley out of an old Weber frame and a piece of plywood and used a toolbox for the smoke chamber. I used the...

To clean or not to clean

The biggest thing to me is keeping grease in check. I saw some pics of a Bradley grease fire and that is something you definately don't want. So if you smoke nothing but butts you're going to need to do some cleaning.

    MES 30 Electrical Mod

Thanks for the heads-up on the switch.  If Masterbuilt had used screws instead of the 445 rivets I would still have that snap switch in the circuit.  But they chose the attachment method that allows the least tinkering by the average Joe and I understand that.  I just didn’t feel like drilling...

    MES 30 Electrical Mod

I forgot to mention that I will never use the OEM controller and would ship it to anyone for the price of the postage if you can use it.  It is for Model#  20070910.  PM me if you are interested.

    MES 30 Electrical Mod

I’ve been wanting to get into smoking sausage and the Bradley that I have has smoked nothing but fish for years (http://www.smokingmeatforums.com/t/265678/opinions-on-fish-and-meat-in-the-same-box) so I was looking for another smoker that would fit into my setup.  It looked like a 30” MES would...

Final Smoked Salmon with recipe, instructions, and Qview

Bear, this thread is like seven years of testimonials to your great process and recipe.  I didn’t find it until Oct of ’13 and have used it ever since winning accolades from friends and family.  I have played a bit over the years with the brine ingredients, mostly changing the soy to Teriyaki or...

Opinions on Fish and Meat in the same box

Thanks, Doug.  I did it mostly so I could smoke out of the elements.  It's in our detached garage and it works great for the salmon and mussels. I have had problems with the biscuit feeder also and right now it works correctly but I stopped using it last year.  Now I use 2 of the foot long...
