So I'll give it a shot with foiling tonight. It is a picnic that I am smoking. Figure I'll foil it at around 175 when it begins to stall...sound about right?
I've got a propane Smoke Hollow but I keep plateauing at 175 and can't get IT any hotter and I don't want to just crank the dial up and make more heat at the risk of burning or drying out the work I have already done...
So I am going to be smoking a pork picnic tonight and want to be able to foil it but don't want to be cooking still at noon tomorrow. What temp should I shoot for to know that it is time to foil? 175-180?
Hey all,
I'm currently looking for a KC style BBQ sauce or a Texas style sauce that is good on both pork and beef. I have plenty of the vinegar based and Carolina style sauces but I need something that is a bit thicker and has a bit more kick. Anything you guys have would be a great help!! Thanks!!

So today I decided to branch out from my usual beef, pork and lamb and decided to try something new and smoke a couple of chickens. I think they came out alright...thought I would share the process with everyone...
My wife for the first time decided to get involved and wanted to rub the...
That's a good looking brisket you had there. I've never done a brisket for more than 8 hours and that now has me in the mood to try to do one for as long as you did it. I was a little surprised to see that you did it fat side down but hey if it works then go with it. Great job.....
I've got a 34 cu/in Smoke Hollow. I am looking to upgrade and get another smoker to add so I can have more fun but for right now, that is all that the wife will allow..........maybe over the spring or summer I can get a bigger one.
I posted a q-view thread of some of the stuff that I have been making in the General Discussion forum called Ask And You Shall Receive. Hope you guys enjoy it.
