As most of the others have said, a vacuum sealer is the way to go Just load up the smoker and seal what you don't eat. It's great to get some ribs or whatever out of the freezer, pop them into a pot of boiling water, turn to low, come back in 15 minutes and plate. Easy peasie. But once you...
Thanks guys. It took way longer to complete than it should have because that's what happens when you get old, with me at least.
RedOctobyr, I bought that kitchen vent when I knew I was going to have a garage but before it was even started. I wanted to smoke salmon out of the elements during...
Due to a recent MES 30 purchase I now have 2 electric smokers but only one kitchen vent in the garage so what to do? Wanting everything on wheels I made a new smoker cart for the Bradley out of an old Weber frame and a piece of plywood and used a toolbox for the smoke chamber. I used the...

Bear, this thread is like seven years of testimonials to your great process and recipe. I didn’t find it until Oct of ’13 and have used it ever since winning accolades from friends and family. I have played a bit over the years with the brine ingredients, mostly changing the soy to Teriyaki or...
Thanks, Doug. I did it mostly so I could smoke out of the elements. It's in our detached garage and it works great for the salmon and mussels.
I have had problems with the biscuit feeder also and right now it works correctly but I stopped using it last year. Now I use 2 of the foot long...
