Quick question for the pros.
I understand the rest in slightly open bag over night, but I want to leave a batch for a month.
Do we seal the cheese up after the days rest or leave it slightly open for a few weeks??

It's a beautiful 25 degree c today so in go the new pecan pellets into my home made tray.
I put 1x 3ltr frozen bottle in but temp still climbed in the keg smoker.
So in with a second. Lol
Anyway that bought it down to 20 ish degrees.
So...

We struck 36 degrees today. To hot for cheese.
So I'm wondering how it'll go if I started with it frozen.
I've got my vertical keg smoker and a tray for the pellets.
I've read a bit of moisture will aid smoke stick...

I'm going to do the letter box mod to my keg smoker for cold smokes, but would like some done for Christmas..
One question though. How the hell do you keep it for 12 years??? That would kill me lol..

Anyway yea throw up some recipes. I myself am just starting and tackling some more basic flavours while I learn my smoker and how it likes to work.
Last batch was a simple soy sauce, and onion powder mix smoked on redgum dust.

I'd try making the joiner between mail box and smoker bigger.
The other boys air has time to cool before reaching the cc, yours doesn't so could also be hindering air flow
I noticed my diy keg smoker really struggled to keep a constant temp in the blustery conditions.
Next time I'll be shielding it.
Being electric to you could wrap it in a leather blanket or fire blanket. Aid with insulation and wind
Nice out come mate. Yea I could imagine the head f it would have been to try and mount the fb under the cc. So many angles.
But is looking good.
Your butterfly valve is different I give you that.. Personnelly I'll be sticking to opposing 1/4's of a circle. Much easier imo.
