I would be surprised if this unit did not have a safety device to turn off the heater should the primary thermostat stick. You may or may not have removed it from the circuit. I would want an over temp safety in my circuit.

It takes very little to set off a GFIC, a damp connection can trip the GFIC. Heating up the smoker may dry it so it will work again with the GFIC. Try setting the smoker to 250° for 2 hours and then try the GFCI again.
