Congrats, I am a huge fan of drum cooking. I was looking at the OKJ at Walmart and it looked like their display models came with the defect mentioned in the video below. I've heard that if this is the case with yours you can call OKJ and they will send the right part to fix it for free. Just an FYI.

I'd suggest wrapping them in foil to increase the tenderness. I run my drum between 275 and 300. I hang for about two hours then wrap with a little liquid in the foil and put them meat side down on the grate for 45-60 minutes. Then out of the foil and sauced for about 15 minute for the sauce to set.

I am from West Texas too and there are laws here. Pretty sure you can't just fire up a cooker, run 70 mph out to the oil field, and start serving food. I have a feeling you will be overwhelmed when you realize how involved the process actually is.

I bought my Vision Grill at a discount because it was a display model. During its time as a display model one of the side trays was broken. I called Vision and they sent me a replacement free of charge.
Take what you see on those shows with a grain of salt. I like a more defined bark so I wait until way later to wrap, if I wrap at all. I am not competing though.
I'd still go with the Hunsaker due to the stainless steel parts. Although it isn't on their website you can choose Hemi orange. Chevy orange, or any of these high temp engine paints.

I thought the small version looked kinda cool and the price was good. However, the $700 price tag plus shipping seems a little steep. I bought a Hunsaker with a hanging rack for $850 and free shipping. Given the option I would still get the Hunsaker over this cooker.
I also wanted to start making my own bacon so last week I started this recipe. I smoked it yesterday. I chose to use my Pit Boss since it could hold lower temps, but the lowest it got was 175.
