    I usually give them a dusting of corn starch and let them sit uncovered in the fridge for an hour or two to dry out. I cook at higher than 275 though.

    Looks like a super thick UDS. I might consider buying a vortex basket to hold the coals. Fire it up and test the temps for the different grates. Consider figuring out how to hang meat in there.

    First brisket - was not what I expected...

    The description does seem to indicate that it was overcooked. However, overcooked is still really good and way better than underdone. There have been many times when I ran out of patience and pulled a brisket too early. I'd say that your first brisket was a huge success.

    Personally I wouldn't bother putting that much time and effort into that cooker. I would rather put the time and effort into cooking so I would go get a smoker that doesn't require that amount of modding.

    For handling cold food I use the regular nitrile exam gloves from Sam's. For handling hot food I put those same gloves over a pair of white cotton gloves found at automotive stores. For handling hot grates or other equipment I have a pair of welder's gloves.

    Are you looking to grill and smoke with it or just smoke? I got the Pit Boss Copperhead 5 on clearance and it has a ton of space. Works like a champ, but no grilling option.

    I'd go ahead with a gasser. Sure the rectec could probably pump out some burgers and dogs, but if it is rarely used and not properly maintained it might not cook anything.     Honestly if it were me I would pick up a Weber kettle for that type of situation. Save a bunch of money and have a superior grill.
