Nial, you can buy tins of BBQ spray paint, you just spray it on and then light a fire in the BBQ for a few hours to cure it. I've used it on mine and it worked great, it's lasted 5 years so far.

Sounds a good menu, I can't really help with the cooking side of things as I'm still learning myself but that plum chilli sauce sounds a great idea. I'd be interested to know how that turns out :)
They're just a brand of charcoal briquettes. They seem to burn more consistently and longer than other brands.
Someone may turn up who knows more than me but they seem to be the favoured brand from what I've heard.
