    I could be wrong but it sounds like you need a smaller, hotter fire with more oxygen in the equation. If your fire is too big in the first place and you have to choke everything off (including the stack) it'll be dirty, and you won't have a good draft through the cooker (hence maybe the hot spot...

    Can you post some pics of how you placed your gaskets and where? I've been eyeing these cookers and the ones I've looked at each seemed to have a couple spots on either lid where it didn't sit flush and had a gap.
