Need Help How to seal fire box on old country Pecos

For the side firebox door I wouldn't stress over that. The small amount of air you get through those gaps is unlikely to cause you major problems, plus if you are stick burning you should about always err on the side of more airflow and rather than choking off your fire. For the top lid you can...

Oklahoma Joe Original tuning plates question

I don't think it's all that critical, I had plates cut for my offset (different cooker), it has a baffle over the firebox opening so I just had them cut the same width as the baffle.

    Whitch Old Country is it

That is the Pecos model. I have one myself.  You can get some nomex gasket from bbqgaskets.com, I went with the 1/2" x 1/8" thick and put it on the door of both the cook chamber and the firebox. The 15ft is just the right amount. It helps some, there's still some leakage, but it's better. You...

Need Advice Looking For a New Vertical Smoker!

If 'set it and forget it' is in the equation for you, I think the Pit Barrel Cooker is worth a look. Nothing but good reviews from what I've seen.

The Minion Method Explained w/ Tutorial

Does anyone have problems with draft when using the Minion Method in an offset cooker? Using KBB, when I close the damper way down to keep the burn slow, I end up with a hot spot on the stack side. I found the sweet spot on the damper that gets me even temps side to side, but then I get too much...

Need help sealing a firebox door on an offset smoker

The firebox certainly doesn't need to be airtight as mentioned. Based on the photos I don't see how you'd be getting 500 degrees in the cook chamber unless you had the firebox filled to the brim with fuel.  What kind of cooker is it? How are you bringing the pit up to temp...Minion method? How...

Old Country BBQ Pits Pecos Owners Thread

So I wanted to try the charcoal basket and minion method with this cooker as I have a yearly big party coming up in a month I am cooking for and I will need to run the smoker all day. I bought two of the 12x24 expanded sheets from Lowe's and bent them in half and fastened them together in a...

Old Country BBQ Pits Pecos Owners Thread

That's some dedication to the Old Country right there. Lang is definitely intriguing but I just can't spend so much on something that sits unused except a couple times a month for me. One thing that seems lacking on the Pecos is heat recovery and overall radiant heat efficiency. When I open the...

    Smoker around $200.

+1 on Old Country BBQ Pits from Academy Sports. They have the thickest steel for the price, and have features usually only found on higher end rigs. It has a heat baffle, the exhaust is at grate level, it has a warmer on the firebox, nice slide out expanded metal cooking surface (which I love)...

    Wood/charcoal question

I also sometimes think about just moving into the oven since it's foiled but for ribs or brisket I always like to put it back on the cooker unwrapped for 10-15 minutes just to firm up the bark. Not sure how that would turn out if I removed the foil for 10 minutes in the oven.

    Wood/charcoal question

+1 for saving smoke wood and just using charcoal for after the meat is foiled. Which makes me think, anyone ever switch to charcoal and/or just the random hardwood firewood bundles you can get from gas stations or grocery stores? Thought about that, but would be scared it would throw some funky...

Old Country BBQ Pits Pecos Owners Thread

The other night I ran a bead of high temp silicone around the cook chamber and firebox. I was bored with about an hour of daylight left last night so I decided to fire up the cooker and see how I did with the seal. In the end my seal job was terrible and I'll have to redo it. I didn't get a...

Old Country BBQ Pits Pecos Owners Thread

I had the ET-73 or whatever the cheaper one is called for 3 years, probes were fine and just finally crapped out on me after that period of time. The little on/off switch also broke finally on the ET73 so I decided to upgrade to the 732. I like it a lot. So I got 3 years out of the $30 Maverick...

Old Country BBQ Pits Pecos Owners Thread

Looking good! I'm using the Maverick ET-732. It's really nice, although I'm a little concerned that after a few uses with this new cooker the leads will go bad due to being pinched over and over again.  I may end up putting thermometers on each side close to grate level. I would love to do...

Old Country BBQ Pits Pecos Owners Thread

Well I finally pulled the trigger on the Pecos. After cranking it up for about 5 hours and chucking on some beef ribs for fun, I'm happy so far. I'll have to put some gasket sealer around both doors, I'm losing smoke in a few spots. There's gaps in the side door but I'm not worried about that...
