I have basically the same equipment from LEM though, they have not let me down.
A lot of folks don't like the clean up on the mixer but I think if you doing any more than 20 #'s it's well worth it.
Metal gear on the stuffer is a must.
Thank you, ask and you shall receive. Just opened a vac pack for viewing pleasure:
Tastes fantastic, I have a recipe that has gone through many revisions to try and replicate the Kielbasa my across the street neighbor would make every year. I remember the whole neighborhood would smell of oak...
i lined the interior with hardibacker after a lot of research. The chimney is a piece of 5 inch exhaust for a long bed truck that was installed on a short bed. This version has to be my 9th or 10th run at making a smoke house. I'm satisfied with it so far. I needed the height for sausage making.
It is indeed home made. It is a traffic light control box. I attached a 2 burner portable grill to a custom cut steel plate on the bottom. The drawer to the left of the burner houses the AMNPS.
Update 1:
Ended up with 23-20" links and 5-10" links let the smoke roll
Drying for an hour or so, tacky to the touch:
Into the smoker:
Now we wait:

Well it has indeed been awhile. Got the family together to make a batch of Kielbasa for Easter...well they got me together with a text, "are we making sausage". I thought I made plans and didn't remember. Not the case, anyway 20#'s of Garlic Sausage it is.
I failed to get pics of the grind and...
My box was just painted so I stripped it off, I don't know of the temp that powder coating would off gas at, and I would think that getting rid of it would mean grinding it off that may be quite the undertaking.
Yes definitely steer clear of the KA stuffer attachment it will be well worth it to get a vertical, I just did 58 pounds of kielbasa in no time, even after having to load my 5 pound stuffer over and over.
As far as making the burner shorter I tried that and for some reason could not maintain the blue flame, I am always tinkering so a redesign of the burner/smoke generator area is in the works. I originally thought I would have to have it all in a very compact low profile but I have realized just...
Yeah that close to the flame was a problem and still is, I am gonna have to redesign a little bit. In the meantime this is what I have done to circumvent the issue:
The AMNPS sits in the box, the bottom of the smoker is open with a grate, and then there is a baffle between the burner and the...
Well it was only a matter of time...I am the guy that did the other one and I found that the vents on the underside were not enough and did not allow for proper airflow at all.
I ended up sealing them off with the hardibacker and some high temp silicone and then mounted a 4 inch exhaust pipe to...
Well a day late but I was exhausted here are the results
Stuffing the kielbasa, The LEM 5 pounder did just fine with the 40 #'s
Stuffed
Drying before the smoke
Into the smoker, this took 5.5 hours right around what I thought it would be.
THe smoker held a steady 165 to 170 and got the...
