Looks good Aaron! How did the skin turn out? Edible? I actually do this over coals in my firebox also, for a quick meal, when I don't have time for the smoke.
Let me know how it goes man. I actually just snapped both of my probe wires. Bradley grate was too hot and didn't have the door open all the way, soooooooooo snap! Like butter. Was able to reconnect the chamber fire probably so the stoker can manage the food but I'm out a food probe. I need this...
Hey man, the link is from another forum, not sure how the mods feel about that. I can put it up if it's ok. I looked and below is all that was realy relevant.
Allows for the probe to pass through, rubber grommet does not tighten around thermo wire. Not a problem.

Question for you all. Was wanting to find a grommet to pass the food and temp probe through and came across this from another thread. Anyone have any experience with these? They look galvanized. Should I be needing to worry about cooking them off an bit or anything? If I do, I'm worried...
Her are some. I took a cutting wheel to the smoke box bottom vent and cut it off and drill a hole for the stoker to screw into. Also used black RTV for the grill chamber, put was paper on top and closed the lid to cure. The wax paper stuck to it so th at was a fail. It won't affect anything...
Great point! Funny, I did just that last weekend because I had too much soot in the bottom and it was way windy so I said screw it and flipped it over. Glad you brought that up.

I have the rocks bbq stoker with the chargriller side firebox kit. Had to drill a hole but the adapter type is the one you want if you are looking. Let me know if you want some shots of my mods. It may help give you some ideas. That smoker will keep temps.

I just bought one of these about a month ago and am very happy with it. IMO, those temp fluctuations are not bad at all. Some people say, sticking within 30 degrees is fine. I am able to keep it allot closer than that (5-10 degrees) with a stoker though. Depending on the condition...

Looks to be. Doors are definatly thicker. There is a frame around the doors on the underside to make the seal but the thickness of the chamber is thinner than the doors. I wouldn't be concerned with it if you are. I used to have a chargriller duo for my starter and I have to tell you the heat...
I can check on mine when I get home. They may have made some changes like I've read on how the Pecos were made a while back. Not sure but I know mine is solid.
You talking about in the center where the bolt is? I looked at that and it looks like they welded a bit in there so I wasn't going to even try that one. I haven't taken it out to see if there are threads. I'm going to put an emblem or something in that spot and drill a few holes on the bottom...
