What SGH1 said. I run a Stumps with the Digi Q. Its almost cheating. Backwoods and Pitmaker are both outstanding cookers. As far as transporting any vertical in a minivan it's not going to happen. If you want to transport just stick with a WSM for transport needs and leave the big boy's at home
Just run it for 6hrs at 225. Marinade and wrap. At this point you can bump it up 275. Around 195 start poking it with your instant read probe. If she still a little tight let her go and check about every 30-45min. you will know when that probe falls right through her. If she not giving it up...
Nope, gets used in the backyard and on the comp trailer. The one down fall is moving it around. Thing is a 500lbs beast. With a Digi Q you can 100% trust it. I can finally sleep for more then 2hrs at comps
Gravity fed Beast. I've only fired it up once. Sure is nice to know that were ever you set it,
it's not going to move until it runs out of fuel. One fuel load will run about 30hrs @225.
What works for me is a good brine. You can google "brine recipes" and get a million different version. spatchcock it, skin side down. Hit it at about 275. Roll it over when the thighs are 140ish. Yank it once the thighs hit 160ish. Wrap it tight in foil, then wrap it a few times in a towel and...
It's not so much temp. It's the wind. Mines gone 12hrs in 20degree temp dumping snow with no wind. If you plan on doing a 9hr+ smoke, I would wrap it with a welding blanket just to be safe and not eat through so much fuel. The wind is really what chills the WSM down. I've had wind kick up on...
You can use a little camp stove like a whisper lite and heat up a little bowl of water. Almost boiling. Put the fatties in a ziplock bag and roll it up tight. Drop those is the warm water for a few minutes and that will put some heat into the fatties. Or hell, just bring a skillet like you suggest.
