Here is what I am thinking....
I have one of those KitchenAid mixers. Don't have a grinder attachment (yet). Do they have a "stuffer" attachment (I think they do and it might be a package deal)?
I'd like to start by buying a basic pre-ground sausage mix (chub) that is basically ground pork...
OK, so is going to be a beautiful day tomorrow in NE TN and I have to get my smoke on!
This is what I'm thinking about....
4 each of Thighs, Drumsticks and Wings sitting in a brine until tomorrow AM.
Thighs will then be marinated in an Italian dressing, garlic salt, poultry seasoning, OJ...
Get some air flowing.....pull the chip loader out a little. Pull the chip train out 1 1/2 inches. don't latch the door all the way tight and leave the vent wide open....
Well my wife has had enough of the smoking in the MES 30, so pulling a fast one by cooking a beer butt chicken in my trusty Weber Grill. I had bought a bunch of chips before I got the amazing AMZNPS so I need to use those up. So, I have a foil chip pouch with apple and cherry back on the heat...

Not sure I...

Go with the MES 30" from Gander Mountain. $129. Lowest price I've seen. Plenty of people will vouch for it. Plenty of good reviews. I have it and love it.
I know this will sound weird and there are people out there that will question what I propose, but will do so anyway.....
If you have (or plan to get) an AMZNPS (and most owners who have an MES 30 or 40 would likely agree that you should) a little extra airflow at the bottom seal might not be...
Amazing Price. Check it out. This and AMZNPS and a Remote Temp Probe is a match made in ... well you know.

Everything you would need.
Thought I was working my way up to a brisket but now I see I need to work my way up to a standing rib roast (that's the same as a prime rib right?)
That looks amazing.
