Looking for ideas for creating a charcoal ring of sorts in order to perform longer cooks and to also have opportunity for indirect heating. I also want to keep the charcoal off the sides of the kettle since I have heard this is not ideal.

I won't be the last to say this, but the heat and water is the likely culprit. Try filling pan with sand (seriosly) and covering with foil. The meat will shed moisture and the sand will create even heat and not steam.

Might want to try a non caustic natural cleaner and a full water pan and try to steam it then scrub with a plastic scrubbie. For the vent, use your torch for the amznps and heat it up. That will free it up. Should be left wide open anyway.
