    Home Brewing

Probably been brewing off and on for around 20 years now. Made some that went down the drain and some that were real good. Kinda like this smoking thing the more you do the better they get!! The biggest tip I could give is clean things well when you are at the right places that need to be clean.

I picked up a dozen of them the other day plus a bunch of chuck roasts that were on sale for $2.74 a lbs too. Going to smoke them for my Daughters graduation party in May. Going to be a lot of work. I just hope everything works out! We got a few looks with a cart full of meat! But I think...

I got the 3/4 horse one this year and it is great. I can't imagine how much the bigger ones would go through!

    Coffee can and wood chips/chunks?

I tried the coffe can in my Brinkman offset fired by a turkey burner. I had split down some hickory into about 1 inch strips that were the same length as the can with a hatchet, placed it above the burner. It made real nice smoke for a hour to 2 hours. I need to do it again one of these days.

    Venison Breakfast sausage

Thanks guys, the time is here not coming quick for me! My 15 y/o shot a buck a week ago Sunday. So he is going to become either sausage, salami or jerky maybe some of each. My brother has the Rytek Kutas book, i thought maybe someone had a recipe that they thought was the best they had tried...

    Venison Breakfast sausage

Does anybody have a good recipe for making breakfast sausage using deer? Last year I used a Cabelas mix that the family really liked. It appears that they don't have it anymore when I looked on their web site. Thanks, Mark

home made kraut part 2-qview, hea WD!!!

Very good post!! I just got done with some kraut a couple weeks back. Pretty much did the same as you, only used a pressure canner. The bag with water is sure a slick way to make a seal. When the guy told me about using it I said but my Grandpa used to use a board and a rock ,then skim...

    Trying to choose...Masterbuilt?Bradley?SmokinTex?

I mostly use a Bradley original, and have had great luck with it. I did build a PID to control the heat which does a excellent job (It holds within 2 degrees +/- of where it is set once up to temp) The bisquettes do cost a little bit, but give consistant smoke. I can get things et up and...

    home made kraut with QVIEW

I have doing it the same way for a couple years now... pretty much foolproof! I seen some crocks the other day on the net that are made for fermenting in. They have a groove that the lid fits into where you put water in to create the airlock, and if I remember right they also had a disc that...

    Curing A Chicken?

I have done chickens in Morton TQ brine with some other stuff, vinegar spices etc. I usually do around a dozen birds to give to the neighbors at Christmas. They always turn out really good, and after doing this several years I think they look forward to them. They don't turn out quite like a...

    Deer roast!

I have been doing some loins/backstraps in the smoker lately. I have been rubbing them with some seasonings and cooking until they hit 140 IT. They have been great, be careful not to over cook! My wife even is asking for more, I couldn't hardly get her to eat deer before!

New To Smoking - Want to Make Deer Jerky

I can't advise you on which smoker to use, I use a Bradley electric for making jerky. I set mine on 170 degrees and rotate racks. If you don't want to mess with making your own spice mix, I use High Mountain's cracked pepper and garlic mix, I really like it. And is easy to use.

    Thermapen

My wife and kids got me a Thermapen for a Fathers day present. I got to try it for the first time yesterday, it sure worked great! (Of course it should for the price!!) I did some venison shish kabobs on the grill. It was handy and very fast! I just hope it is durable as well, we will see.

    stay masquito free while smoking

I got one of those Thermacells last year, tried in the outhouse in Canada, when fishing. It worked real well, it is a real pain trying to get your business done while being swarmed by skeeters! Also used it during our youth deer season in the fall while sitting in some corn rows. You could...
