    You answered your own question!  Pork shoulder AND some fat back. Pork shoulder is same as pork butt. I use pork shoulder like 5 lbs and add 1 lbs back fat.

    I look at it this way. If your pork belly is about 8-10 in wide  and 16 to 24 in long. Now how many people would like a 16 in slice of bacon, and how do you fry it?

    Is it whole chicken? I would put it in foil and leave it go for a bit then put it back in. I done chicken till it was about 180 and it was fine. Just my 2 cents

    How Many Mes Owners Here?

    Mine was about 1 1/5 yrs old. Puchased at Home Depot. Had no receipt for the purchase and Masterbuilt sent me new parts twice and third time they sent me a new electric smoker. Original was dual fuel (JUNK BAD DESIGN  on burner system)

    I hot smoked by bacon till internal temp is 155 and then let it rest in a fridge overnight.
