double smoked bacon? opinions requested
I have cold smoked the cured belly for a couple of hours then put in the fridge overnight before hot smoking. It definitely increases the smoke taste. sometimes a little too much- wombat

how often rub a pork belly with cure (rub)
That's the recipe I have used. The rub is applied once and the bag is flipped and massaged twice a day for seven days per inch of belly thickness- wombat
