    Holding ABT's

My mom has a pyrex 9X13 insulated carrier. I have put the ABT's in there, heated up the hot pack and transported them that way. ABT's are much better when they are still warm and crispy in my opinion.

A tale of two chuckies.... and some corned beef

Thats a nice looking smoke ring on the chuckies for only 3 hours of smoking. I bet they tasted great. Was the corn beef pre cooked as leftovers, or raw?

I've just rolled out a 1lb chub for that size, So I'm thinking 1lb of the ground meat is about right.

    I have a pepper sprout!

I planted 2 ghost peppers, 3 jalepenos, 2 anaheims and 2 serranos. I've planted them about a week ago and so far only have 1 anaheim barely popping through the soil. I put 3 seeds in each pot which will be transplanted in about a month.

Smoke is done. Now cleaning up $^%^&*^

I've cleaned the racks well, and the water pan only when i get grease in it. I figure if i'm not eating anything that goes in the water pan, I dont care much if it gets smoke build up. I am kinda paranoid about getting the mold build up like I've heard others have had in MES's, so I am careful...

    Hello from Southern California

Welcome, I am also living in Southern Cali and I have a masterbuilt (got it on sale from the bass pro shop off the I-15 and I-10). A brisket is a very difficult piece of meat to perfect. If you head over to the beef section you can see several posts from people who have got it down, might give...

    Frozen how long?

Sorry nobody got to you sooner, as you've probably already made your decision. I would rub it down even if it wasn't fully defrosted. As it sits in the fridge overnight continuing to thaw, the rub will still do its job. Now it should be fully defrosted before smoking though. let us know how...

Different way to do venison bacon with pics

That sure looks tasty. I sure like the color to it. It doesn't have the bacon 'look' like the cake pan does, but it probably tastes just as good.

    Who uses Rib Racks?

Can you post a picture to show the method you are talking about? For the beef ribs I've boughten, they wont flex very much until they are in the smoker for several hours. It sounds like it would taste pretty good. I do love chilies :-)

    First Chuckie, made into sammiches

I have an electric smoker, and the manufacturer doesn't recommend opening the smoker up very often to spritz it as it will never be able to maintain temperature, so I just kept the water pan full. The only reason why I put it in the oven at a higher temp to force it was because it was getting...

    Who uses Rib Racks?

I do both, but as someone has said previously, it does make it difficult if you want to put sauce on your bones. When I do beef ribs I usually lay them flat, as the rib rack I have isn't thick enough unless I stagger the ribs every other slot. Pork ribs I use the racks.

    First Chuckie, made into sammiches

Its a nick name for a beef chuck roast. Sometimes you can find them on sale for quite cheap.

    First Chuckie, made into sammiches

Hi ya'll, I just finished up with dinner that I started yesterday. I made my first chuckie. I rubbed it first, then smoked it at 225 for about 10 hours, until it finally reached 165. I then foiled it and popped it in the oven at 315 until it hit 205. I had beef broth and onions sitting under...

    Got Ice Cream?

Sorry to get in late on this conversation. I see you are in Whittier, I am in Yorba Linda, I've never seen Albertson's have these events going on down my way. When do they do it? next September I'd like to be out early standing in line for roasted chilies.

Any one else grow their own HOTS?

I grew 2 varieties of jalepenos last year, aji dulce, cayenne, banana, and tabasco. the aji dulce, cayenne and tabasco peppers are still producing (i live in so cal, there is no such thing as a plant killing freeze) For Christmas my brother gave me some ghost pepper seeds. I intend on planting...

First beef ribs in the smoker

Thats a light that they built in to the new redesigned MES with the viewing window. The viewing window is kind of pointless, because after about 3-4 hours of smoke, you cant see anything inside, even with the light on. plus it lets out more heat than a fully insulated door. and rbranstner...

First beef ribs in the smoker

Yesterday was my wife's birthday and her favorite food is beef ribs. I have grilled beef ribs several times, but this was my first time in the smoker. I did a 4-2-1 method and it worked out pretty well. On the grill the beef ribs were still pretty tough and i had to floss a lot to get the...
