Something I learned about my MES 30

The pan you describe is below the heating element.  Above the heating element and chip pan is another drip pan that is tilted to the left so anything drains into the water pan. (In Bearcarver's post above he calls it a deflector plate)  THAT is what stuff really bakes on to.  I covered that and...

This is a new problem (MES)

Okay, my sensor was clean, I only have about 3-4 smokes in the unit (MES 30)  I believe I determined my problem.  If ^this^ is directed to me, http://www.smokingmeatforums.com/t/177376/something-i-learned-about-my-mes-30

Something I learned about my MES 30

This is offered as an FYI from a complete newb so take it for what it's worth.  I had a very difficult time getting temperatures up this weekend.  Took 10 hours to smoke some summer sausage, then Super Bowl Sunday I spent all day and BARELY got my ribs and chicken done.  I've thrown out the...

This is a new problem (MES)

I believe I may be having the same issue.  Where is the sensor located and how does one clean it?

Summer Sausage Newb first time (follow up)

Thanks to those who offered help with my previous questions. http://www.smokingmeatforums.com/t/176982/summer-sausage-newb-question So yesterday was the day.  I used two pounds of venison burger with an unknown fat content, 2 1/2 lbs. of pork BButt, and rounded it all out with 1/2 lb of lean...

    How Many Mes Owners Here?

I'll add to my previous reply, while I DO very much like the ease and convenience of my MES 30 and have enjoyed it so far,  it is irritating the thermostat and meat probe is off so much.  I can understand several degrees but as near as I can determine, my meat probe is off by 30 degrees and the...

    How Many Mes Owners Here?

I got the 30 several weeks ago at Lowes.  Read reviews and it seems typical of most reviews, either "love it" or "hate it".   Looked like those who hated it had trouble with the controller going out (after warranty exp)  So I bought the two year warranty, something I never do. After seasoning...

    Newb, drying peppers questions

Thanks for the help.  Looking forward to a bumper crop this year.  In the meantime, I may buy a batch from WallyWorld and try drying some as an experiment. Bet some of those would be good chopped up fine in summer sausage or a fatty.

    Is cherry wood safe

Probably what the confusion is,  wild cherry leaves, when wilted, produce cyanide.  It has been know to kill goats or other animals that eat enough of the leaves, which by the way, the cyanide produces a sweet taste that is attractive to goats.  I cannot imagine the wood itself has any toxins...

    Summer Sausage Newb Question

That makes sense.  I didn't even think of that.  The beef IS very lean as I intended to make the SS with the lean beef and 50% butt.  So I'll leave the beef out and try that later.  As stated, I don't know the ratio of fat in his venison burger but just looking I'd say pretty low.  I'll ask but...

    Newb, drying peppers questions

My oven's lowest setting is 175°.  I don't want to cook them, just dry them out and that's why I wondered about the MES at a low temperature. I knew freezing them whole would turn them to mush and that's kinda why i'm looking for an alternative. Thanks.

    Summer Sausage Newb Question

Going to try some summer sausage this weekend.   My intent was to use some left over Boston butt and some lean beef, 50/50 with a Lem seasoning kit. But a friend just gave me some fine looking venison burger.  So I thought that would make some good SS too. So, would it make sense to grind the...

    Newb, drying peppers questions

I did a search and didn't find specifically what I was looking for. I love jalapenos, and grew quite a bit of them this past year.  I usually slice and pickle them and eat them when we have tacos, chile, etc. However, this past summer I had an abundance, more than I wanted to pickle, and ended...

First time newb, ribs and wings today

Thanks for the responses and advice. I forgot about adding some cider or juice at the foil stage. I'll do that next time. Also need to get some apple wood. That shouldn't be too difficult living in one of the top apple producing counties in the US! I'll also cover that drip pan with foil. So...
