    Trimmings from Brisket? Use em?

I keep it and put it in aluminum loaf pans above the brisket while I cook it. Cut some slits in the bottom of the pans and as the fat melts, the juice will drip over the brisket and create a "self basting brisket". Here's post where I showed it...

    First Brisket, looking for ideas.

There are LOTS of posts on here about how to do a brisket. This is one that shows how I do mine. I did this 13 pounder back in March. Hope it helps. http://www.smokingmeatforums.com/for...331#post290331

Turn your Weber Kettle into a smoker

Looks pretty slick! If you combined that with this, imagine the amount of grill space you could have! http://www.smokenator.com/default.htm

    Wireless Digital Grill Temp Meter

I actually have two of a of a different model (Maverick), and one that is some other brand (don't use it enough to really pay attention.) As far as using a thermo probe to get smoker temp, you have to have it just above the grates, I put mine through half a potato so that th probe is sticking...

    Brisket Time?

The meat will stop absorbing the "smoke flavor" at around 150. Since you said it's alread around the 180-185 mark, I would say, if you think the "crust" isn't developed enough for ya, take it outta the foil, to "get some crust". Or just leave it in the foil until it hits about 190, then unfoil...

    Hello

Welcome! I have the same brand, just the slightly smaller model, the CharGriller Smokin Pro, and I love mine. I did a few mods to it to even out temps and make it for efficient, but in all, CharGriller puts together a darn good smoker in my book. Here's a few threads that I've come across on...

    (Fairly) New guy

Nope, never heard of 'em. How do they cook their ribs? I'll have to let my parents know about them. All I hear from my parents is "When are you gonna overnight us some of your BBQ?" I have a neighbor that gets Omaha Steaks shipped to him quite regularly and he gives me the Styrofoam "coolers"...

    (Fairly) New guy

So what part of Ohio you located? My parents and I moved from Missouri to Ohio when I was young so we knew what BBQ was. To most Ohioans, BBQ was defined as cooking meat over coals. To us BBQ isn't a verb, it's a noun. My folks and I would go to the local "Chicken BBQ" (Chicken Grilling) and...
