    Ribs are mustard base with Billy bones comp rub And the 1/4's are a hodge podge mix of what's in the spice rack All done at 225* for the 3/2/1 method for ribs sake.

    Question When smoking what temperature, how long, and when if you do, do you wrap it? My texture was great but it seemed to be not as moist as I wanted. But everyone enjoyed their meal.

    Newbies 1st home build?need advice.

    Thing still rocks, my advice is go as big as possible. I tried putting it in my RMS and it could only hold 165F, so I'm getting a bigger one for it. Make sure you have some kind of shield over it to keep drippings off it.

    Took about 4hrs or so, texture is good, has a definite smoke ring when broken in half. The hickory flavor is what I expected using hickory chunks , but the teriyaki is faint , you almost need to know what was used to figure it out. But , a success for a trial run. Happy Labor Day to everyone.
