SMOKED STRIPER STEAKS & HEAD - ANOTHER LOCAL FISH & CAUGHT TODAY!!!!!!

SMOKED STRIPER...Wow. We were just talking about that. We get hundreds a season and was wondering how they are smoked. I just tried smoking Ling (see new post) and they were fantastic. When the Striper season picks up, I'm going to try it! Thanks!

Which of these two models would you choose

"They are good smokers when used as directed." What are you saying here? I'm happy you are happy with yours, Dig. Which it was (used as directed). I don't know what else to tell you. The smoker WOULD NOT reach over 185 degrees when set at 250 degrees. I can have all 125 people (or so) at my...

Which of these two models would you choose

Yep Sarge, replaced ALL SI#3 wiring, replaced heating element, installed permanent thru-the-wall probe - bypassed SI#3 analogue controller, controlled now by the digital Pid Auber. Good to go. Who knows what was bad on it - it was sitting somewhere for over a year (it is stamped May 12, 2013)...

Which of these two models would you choose

I ripped the defective junk that was in there for a second time. PID Auber installed with permanent probe. I basically bought a stainless steel box and cart for $700 plus $215 for the PID Auber and $29.00 for a thru-the-wall probe. Never again!!! Back to smoking ribs - they were good! Good luck...

One thing I might add, they are a great bunch over at their forums, they know their smoke (like here)!

Which of these two models would you choose

Like I said, I got 2-3 good smokes out of it (ribs) - best I have ever had. I used the "Money" rub from Big Poppa's. After that, the 5.5 hour cook time wielded a melted, wet, uncooked, babybacks that I had to finish on the grill. I replaced the electronics (controller and heating element) that...

    Hello smokers!!!

Welcome bud, a lot of experience here. I used to attend the Rose Festival back in my Sailor Days. We used to take the Pageant girls up the Columbia. Even got caught in Mount Hood last time she erupted. Anyway, welcome aboard!

Thunderjet, forget about the SI units. I have had nothing but problems with my SI #3. I have had it apart more than I have used it. The temp sways are way too off to smoke. I was sold a unit that was over a year old and had a bad controller and was sent a new controller (that was also bad)...

Up near Elmira, halfway to where my cousins are. My buddy is up there - maybe you know him, Joe Sheshane? I am headed to Maryland, Tennessee, Florida in September. I thought maybe you would be on the way. Dig, I might be headed up to Honesdale the end of August and if you want to meet somewhere...

kbosch74, I had the same problem. Mine is stamped with a 05-12-2013 date and I ordered it in June 2014 - so it sat somewhere for over a year before I got it. I really wanted to like it and for the most part, the guys at their forums (although it is said it is not company run/supported) were...

After doing research, you are correct, Sarge. It is a capillary type thermostat. I just can't find the exact part number.

    SMOKIN-IT SMOKER

From what I can tell, Sarge, it looks like a simple rheostat and not a thermostat. But since it has a temp probe, it just might be a thermostat. Anyone?

    SMOKIN-IT SMOKER

"the line leading to the control may be dented a tad" What line Sarge? I saw a line (I guess maybe 16 gauge white) had a little chink (bulge) in it, but didn't think anything of it. It's the thinner one that goes up to the controller with the crimp cap connector on it. I took pictures when I had...

    SMOKIN-IT SMOKER

There are only 3 things that could actually be wrong with this smoker. It's pretty simple really. There is the controller, the heating element, and the wiring. If it doesn't work, it is one of the 3. The wiring is fine, I opened it and checked it first. The heating element I would suspect would...
