It is Begun! My First Smoker Build

Thanks Len, I am still pretty excited about how it worked. I've now taken the CC door off and removed the small chain link hinges in preparation for installing MTMSEVEN's big ol links instead. All I need is more days warm enough to go out in the garage and get it done!

It is Begun! My First Smoker Build

With the cold weather and a full schedule, I haven't been able to do much work on the smoker lately. I have mounted the rifle bolt and receiver as the FB door latch, which worked out spectacularly. Here's a video of it working.

Oh, and I know my welds are pretty ugly, I'm a rank amateur and learning on the fly.

It is Begun! My First Smoker Build

Oh, and here's a taste (pun intended) of what I got from that first cook. I got lots of raves, and I was very happy with my product. After a loooong time on the smoker, I got impatient and ifnished the big rear shoulder in the oven, and the two smaller front shoulders in my MES. Used some...

It is Begun! My First Smoker Build

Ok, so update time. That first cook I mentioned told me a few things about this cooker, and clued me in to some of the work I need to do on it before I even consider finishing. The cc door leaks were expected, a bit of sealing will take care of that. The weight of the door, however, was an...

It is Begun! My First Smoker Build

Coincidentally enough, I just finished my first cook on it. It's not done yet, but I am providing pulled pork for my uncle's funeral dinner and the beast was the only way I had available to get it done. I did a seasoning run a few days ago, during which one of the chain link hinges snapped loose...

I'm looking at thermometers now, and I'm curious to hear your thoughts on probe length. I see a nice one with a 4" probe, but it seems like that could get in the way in there. Is there an advantage to putting the probe tip so far into the cc?

Breaking in the new MES with a Brisket

Well, it was a success. Seriously. Some of the best pieces of meat I've ever had. The tri-tip was very small, so when I pulled everything out I didn't bother to rest it, I pulled it apart and we all snacked on it while the brisket rested. It was very juicy, and incredibly tender. I can't wait to...

What is good about them being gen1 units? I'm very unfamiliar with the electrics.

Breaking in the new MES with a Brisket

Having a brand new MES at the house has had me going crazy wanting to smoke some flesh. So I got the brisket out of the freezer from the half beef we ordered and I've got it in there. I also threw in a tiny tri-tip from the same beef order just to see how that goes. I did a really simple rub...
