    Hello from Tennessee - Brisket question

    I've heard meat will not take in smoke flavor once it heats up, but I've also eaten chicken that was foil wrapped until the end of the cook and it had a strong smoke flavor. To be safe, I agree you should smoke it first and then finish in the oven wrapped. Let us know how it goes.

    Yes, the rub can burn if it's got sugar in it, but black outside comes from the smoke too. Try cutting back on the smoke or wrap it in foil for the last half of the cook. Or just let her get dark and gobble it up. We don't eat the skin anyway.

    I am so sorry to hear about your pain. Yeah, if your turkey is still frozen, the brine won't work, but it should be fine without brining. It's probably too late to say this for today, but yes, thawing it in cold water helps speed up the thawing drastically. This must be a good day for smoking...
