Oh l understand all that thermodynamics stuff and how the sand could help maintain the temperature but l'm in Florida and temperature isn't really much of an issue here except in the summer when it already hot enough to slow cook with out the smoker. LOL 128514
I only use water in the smoker for stuff that will dry out and l don't add sand to the water tray either. MES don't get hot enough to heat the sand to be of any use
I don't know if it's normal but with 6 siblings 7 children in all and we all have Masterbuilt smokers and it happens on all of our smokers so l don't believe it hurts.
I know this is an old thread I am posting on, however, I have a MES digital smoker, I have smoked with water in the pan, without water in the pan, let the pan go dry and even put water in a foil pan right beneath the meat. Honestly, I cannot tell the difference between any of them.

Never! Never pour your water pan down the drain might look like there's not much that might not be much fat but there could be a lot of gelatin (as I found out when I poured my down the drain) the gelatin did what gelatin does and it clogged the drain .9889️
