I agree with Fatback, build 2 or 3 UDS for the same price of a WSM 22" and start practicing!

It sounds like you got it right. How many "cold" briquettes do you have down before you had the ashed over coals.
When I use this method I make sure I have a good amount coals and wood chunks down before I add the fired coals.

I just bought 3 cans of Duplicolor engine paint from Checker and a can of clear. Only $22 bucks so not bad.

Cant tell the difference. It's really about being able to pick out a good piece of meat as others have stated.
