    how long to smoke cheese

    I have some cheddar, swiss and monteray jack I smoked about a week ago, going to try it on Thanksgiving day.  I only smoke it for about two hours.  This is only my 2nd time for smoked cheese.

    I haven't tried this yet, but in my opion, if the bird gets done early, wrap and put in the cooler, that would keep it moist.  Before ready to serve put in the oven with brioler on low to crisp the skin, you wouldn't be trying to cook it anymore, just crisp and brown the skin.  Maybe someone...

    Bear, I have a question for you. I have made both BBB and belly bacon using your method with TQ.  I using TQ and doing an injection would you disolve the TQ in water then inject?  I don't remember reading anything about injecting with TQ as the cure.  Thanks

    Milk powder in SS, what purpose does it serve?

    I was able to get a pork belly today for $3.49 per pound.  It looks like a good one.  I picked it up at Mexican meat market called La Adelita on highway 183 in Cedar Park.  Can't wait to make my bacon.  I plan on curing it this Saturday.
