I have a Snoopy like @BGKYSmoker has. I bookmarked his 2017 thread to rewire for a Auber PID and think will go that route and also ordered the fan kit.
I have read lots of posts here about SV summer sausage. Lots of good info but I can't seem to put together a step by step. All seem to smoke for a period of time then drop in a 152 degree SV for X minutes. I guess my main question is do you bring the bath up to temp before dropping the SS in or...
I like the electric, plug them in and go. I've got the X-Maxx and Sledge that I run most. Not really run, I jump and flip them.
40 to 45 mph on either one I have if I run them on the street.
What pellets are you using? I've seen lots of talk about the bulk cooking pellets not doing as well as hardwood pellets for the tubes and trays for producing clean smoke.
One of the few thing they didn't screw up was breakfast, I had SOS most mornings on toast with eggs. I'll never when in the field they would bring breakfast in hot boxes. The scrambled eggs were in an alluminum (close enough) container and the edges were green.
